Kid tested, mother approved

Raise your hand if you are the parent of a toddler who isn't a fan of most vegetables?

{raises hand}

Last week as I was doing our menu planning, I was trying to come up with a way to get my kid to eat veggies with dinner, rather than just hurl them across the room or feed them to the dogs as he usually does. After a little bit of poking around on Pinterest, I found this recipe for oven baked zucchini chips.

Looked simple enough, so I decided to give it a try!

Verdict:

Self? Loved them.
Husband? Loved them.
Toddler? Loved them.

I win.

{Please pardon the inappropriately festive paper plates; all our regular dishes were being cleaned in the dishwasher!}

I am allergic to zucchini but have done something similar with sweet potatoes. :)

Looks tasty! And for the record, there is no such thing as inappropriately festive. Long live Christmas!

Yum! Thanks for sharing! I will definitely be trying these. Truth be told, I could use a few more vegetables in my life as much as Reid. I have thought about forcing myself to consume baby food pouches for vegetables and then decided how pathetic/disgusting that would be. :)
